Looking for a perfect dinner on a busy day? Check out my perfect pot roast! Put it all together in the crock pot before work and WHALA, dinner is ready when you get home.
2-3 pound pot roast (I like the arm roast, but any cut of roast will do) This feeds 5-6
One small onion – coarsely chopped
5 medium-sized potatoes – quartered
Salt – to taste
Pepper – to taste
Garlic – fresh about one clove – dried, to taste
Sage – dried, sprinkle a little
Tarragon – dried, sprinkle a little
Put the carrots, onion and potatoes on the bottom of the crock pot, sprinkle with salt/pepper
If you have a few minutes in the morning, place a tablespoon of oil (olive is my choice) in a skillet and brown the roast before putting in the crock pot. Make sure you scrape all the browned goodness out of the skillet too! If you don’t have time to brown, no big deal. Browning just gives a richer broth for gravy 🙂
Put roast on top of veggies Sprinkle the garlic, sage, tarragon, salt and pepper on top of the roast. Set the crock on low for 6-8 hours or high 4-5 hours
If you are a gravy FAN like I am, I have a simple gravy recipe. When you get home remove about 1.5-2 cups of broth from the crock. In a skillet or small pan melt 2 TBS of butter over med-low heat, add 1.5-2 TBS flour, mix to a paste and start adding broth while whisking. In about two minutes you have a delicious gravy for your meat and potatoes.
INSIDER TIP: If you are not a “sprinkle the seasoning” kind of cook, not a big deal. You can skip the trouble of seasoning by replacing the onion, salt, garlic, tarragon and sage with an onion soup mix packet.
