Stuffed Chicken Breast

Chicken pockets ready for the oven

This little delightful recipe takes a bit more time than my earlier posted recipes but well worth the extra 10 minutes of prep.

The following feeds four people, basically one chicken breast for two people so feel free to adjust as needed to fit your family size or portion size.

Pre-Heat your oven to 375

2 chicken breast – (you can buy them tenderized or you can get regular and tenderize them at home. I use the end of an ice-cream scoop to tenderize mine, seems kind of crazy but it works)

Corn flake crumbs – (you can use Italian bread crumbs)

Shredded Italian cheese blend

Ham – (I usually just use deli ham but every once in a while when I have a few extra bucks I buy prosciutto)

Salt, Pepper, Garlic, Onion powder, Season Salt

Take the chicken breasts and tenderize them if needed. Sprinkle with salt, pepper, onion powder and garlic to taste.

Add a slice or two of deli ham on top of each breast

Sprinkle a little cheese on top of the ham

Roll each chicken breast over and put tooth picks to secure the middle and two ends to make a little sealed pocket

Brush some olive oil on the chicken pockets

Mix about 3/4 a cup of corn flake crumbs in a bowl with some season salt and pepper

Roll the chicken pockets in the crumbs and set them on a pan (I place them on a small pizza pan wrapped in aluminum foil for easy clean up)

Place in the oven for 25 minutes

When done make sure you take the tooth picks out 🙂

Serve with rice or mashed potatoes and a veggie side.

INSIDER TIP: For a not so healthy alternative, when the chicken is almost done you can drizzle some melted butter over the top of the chicken. This really makes the crumbs “crispier” and have a lovely flavor. Also very tasty to serve with gravy over the chicken.
